Balmuş

No doubt that up there in the mountains the shepherds’ main dish is polenta with milk, cheese, farmer sheep cheese, urdă or sweet or sour jintiţă.

On holidays or when they have company, the shepherds prepare balmuş. They melt butter in a pan and then add cheese, spread corn flour and cream and mix everything on a small fire. The resulted balmuş is a true delicacy. In some parts of Mărginime it is served with sour milk (a type of fat, sour cream).
